How to make your own peanut butter

Making your own  peanut butter is probably easier that looking for it at the store. Before Michael and I tied the knot he took a PB&J for lunch almost everyday. He loves them! But plain ol' Jiffy would not do for my man. I decided to make him Honey Roasted Peanut Butter. I did some Googling and learned how to it all by myself. It turned out to be so so so good {and so easy}
Honey Roasted Peanut Butter
What you'll need:
Food Processors
Honey Roasted Peanuts
(if you can find Fishers Honey Roasted Peanuts in your area that what I recommend)
5 Minutes
Salt/Sugar/Honey (Optional)

Directions 
Pour peanuts in food processor
Chop for a little minute
Grind for a little minute
Continue to chop/grind until desired consistency is reached
Taste and add Salt/Sugar/Honey as needed or preferred.

 You're Done! Transfer to an airtight container to store

Spicy Chicken Rigatoni

This was a recipe with a few "first". First time I've cooked with red peppers, first time I've used rigatoni, and the first time I looked at a recipe and thought "it looks so good but the recipe is soooo lacking". So off to work I went. I looked over the recipe and made changes as I saw fit. Here's what I came up with. So spicy. So good.

Spicy Chicken Rigatoni

Serves 8
Ingredients
    • 1/4 cup oil
    • 1 tsp crushed red pepper
    • 1/8 tsp salt
    • 1/8 tsp ground black pepper
    • 1 tbs chopped garlic
    • 12 oz chicken, sliced
    • 1 cup Marinara sauce
    • 10 oz Light Alfredo sauce (Butoni)
    • 1 lb Rigatoni pasta
    • 2 cups reduced fat mozzarella

    Directions

    1.) In a sauté pan, heat oil over medium heat. Add crushed red pepper, salt, pepper, garlic and chicken until chicken is cooked. Cook pasta according to package directions (If you’d like you can chop the chicken into smaller pieces after its cooked)

    2.)Drain Rigatoni and return to pot. Add chicken mixture and sauces to pasta. Mix well.

    3.)Pour everything in a 9x13 casserole dish, top with mozzarella, and bake at 350 degrees for 30 minutes.

    The Best Ever Pot Roast

    I've been showing my crock pot lots of love lately and decided to try a roast. I can confidently perfect a filet mignon with a shallot port reduction, but for some reason throwing a roast in the crock pot was intimidating to me. Ha. The joke was on me. Ready for the best pot roast/easiest meal you'll make all week? 
    Here it is:

     Pot Roast

    You'll Need:
    3-5lb Roast
    1 Packet of Italian Dressing Mix
    1 Packet of Ranch Dressing Mix
    1 Packet of Brown Gravy Mix
    1 Bag of Baby Carrots
    1 2.5lb Bag of Baby Reds
    1 Large Onion
    1-1.5 C of water


    Cut veggies (potatoes in half, onion in big chunks)

    Dump all veggies in the bottom of the crock pot

    Add thawed Roast

    Dump mixes directly on top of roast
     

    Pour water over the roast (if you don't want dark spots on your roast be sure there is no seasoning on it.It will make it look burnt)
     

    Cook on low for 7-10 hours
     

     Serves 6-8
